Making a Chamomile Celery Sour

You read it right, celery in a drink other than a Bloody Mary. And this time it's teamed up with of all things, Organic Chamomile Lemongrass. Its fresh apple and hay tasting notes offer a lovely laid-back contrast to the bold earthiness of good ole celery. Enjoy this mocktail straight up in a chilled glass, or over ice with a splash of soda or tonic water. The Chamomile Celery Sour is a quirky, refreshing and delicious winner!

Organic Chamomile Lemongrass - Delightfully Versatile!

Celery Simple Syrup – Yields One Cup
 
Ingredients:
- 1 cup granulated sugar
- 1 cup celery leaves (option – ½ cup celery leaves & ½ cup flat-leaf parsley leaves)
- 4 whole allspice berries
- 10 whole black peppercorns
- pinch of sea salt (optional)
- 1 cup water
 
Directions:
- In small saucepan, combine sugar, allspice, peppercorns, and salt (if using) with water.
- Heat over low, stirring frequently until sugar completely dissolves.
- Remove from heat and add celery leaves (and parsley leaves, if using).
- Set aside and steep for 1 to 2 hours, then strain through a fine mesh sieve.
- Refrigerate in a tightly lidded container for up to 3 weeks.
 
Chamomile Tea Base – Yields 2 Cups
 
Ingredients:
- 2 Organic Chamomile Lemongrass teabags (or 2 teaspoons loose-leaf)
- 2 (3-inch) pieces of lemon peel
- 2 cups water
 
Directions:
- Heat water to temperature suggested for the tea.
- Add tea and lemon pieces to a saucepan and pour over hot water, allowing to steep for 10 minutes.
- Remove tea and lemon pieces and allow to cool completely.
- Refrigerate in a tightly lidded container for up to a week.
 
To Prepare the Chamomile Celery Sour – Yields 1 Drink
 
Ingredients:
- ½ lime, cut into quarters
- ½ celery stalk, sliced into ½” pieces
- 1 ½ ounces Celery Simple Syrup
- 6 ounces chilled Chamomile and Lemon tea
 
Directions:
- In a cocktail shaker add lime, celery pieces and simple syrup. Muddle to smash and release the lime’s juices.
- Add chilled Chamomile and Lemon tea and ice. Shake for a good 15 seconds at least.
- Strain and serve in a chilled Nick and Nora glass, champagne coupe or flute.
